Chris:
1.  You will probably NOT be able to "prove" it was their fault.  Just too
many variables involved.  If this shop magnafluxed the heads, and had
the block for any machine work, they should have checked the heads
for cracks, and checked the block for warpage.  But it is clear that 
they are looking for a solution that does not implicate them, and they
are not going to voluntarily take any responsibility.

2.  Find a new shop to take your business to.  

Sorry, but those are my thoughts.  Perhaps your heads could be fixed
as John L. suggested.  Was there any other engine damage?
